Recipe: Baked Quinoa And Vegetables

  • 1 cup of white quinoa
  • 1 tomato
  • 2 Mexican squash
  • 8 green olives w pimento
  • 2 cups of fresh string beans
  • 1 spoon of salt free herbs
  • 1 teaspoon of salt

Cook the Quinoa according to directions (1 cup of Quinoa to 2 cups of water.  Bring to a boil and simmer for 15 minutes till all the water has been soaked or steamed out).  Slice and quarter the squash.  Slice the olives.  Cut the green beans in ½ inch pieces.  Mix all the ingredients and bake at 350 degrees for 40 minutes.
