Hot Spinach, Mushroom And Tofu

  • ½ cup of onions chopped
  • 5 mushrooms
  • 12 oz of extra hard Tofu
  • 12 oz of spinach
  • ¼ cup of white Quinoa
  • 1 tablespoon of salt free herbs
  • 1 teaspoon of salt
  • 1 tablespoon of coconut oil

Cook the Quinoa as instructed in the package.  Heat up the coconut oil in a frying pan at low heat.   Mix cooked quinoa with all other ingredients in a frying pan for 40 minutes at medium heat.  Serve
